TRIPLE chocolate brownie


There is never enough chocolate and this brownie knows it. It’s cakey but rich and ohhh so good.

BAKING TIME: 25-30 minutes
TOTAL: 40-45 minutes


INGREDIENTS

DRY INGREDIENTS

  • 2 cups all-purpose flour

  • 1 cup whole-grain flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 cup cocoa powder

  • 1/3 cup vegan dark chocolate chips

  • 1 pinch salt

  • 1 cup brown sugar

    WET INGREDIENTS

  • flaxegg: 2 tbsp ground flaxseeds + 4 tbsp warm water

  • 3 dl plant milk (I usually use oat or soy)

  • 1 dl oil (I used olive oil, melted coconut oil or sunflower oil works as well)

  • 1 tsp vanilla extract

  • 100g vegan melted dark chocolate (the darker it is, the more rich the cake will be). I recommend using around 60%.

DIRECTIONS

  1. Preheat the oven for 180 C degrees. Line a baking dish with parchment paper. I used 34x24 cm baking dish, but 30x20 cm works as well, only the cake will be taller.

  2. Make the flaxegg by adding the ground flaxseeds to a bowl, along with the warm water. Mix well and set it aside.

  3. In a large bowl, mix together all the dry ingredients, including the two types of flour, baking powder, baking soda, cocoa powder, chocolate chips* and pinch of salt. Use a whisk to mix this really well to avoid any lumps later **.

  4. Melt the dark vegan chocolate in a bowl in the microwave (takes around 2 minutes, make sure to do this with checking it every 30 seconds to avoid burning) or use a double boiler on the stove.

  5. In another bowl add the flaxegg, the melted chocolate, oil and sugar. Whisk it for a minute and then add the plant milk and vanilla extract.

  6. Pour the wet ingredients into the dry one, and using a spatula, combine them well, but don’t overmix it.

  7. Pour the batter into the parchment-lined baking dish and bake it in the oven for 25-30 minutes, until a toothpick comes out clean from the middle.

  8. Leave it to cool down for 30 minutes before slicing in. This way you can avoid crumbling.

    Enjoy as it is, or with some stewed berries, vegan vanilla ice cream or a drizzle of chocolate.

*If you don’t have vegan chocolate chips, cut 50g of vegan dark chocolate into small pieces and use that.
**Due to the baking powder and soda, we need to mix this well, otherwise the the cake will bake unevenly, since the baking powder and soda are not evenly distributed.

One of my favorite topping is stewed cherries. They are heavenly with this brownie.
