Oh sweet apples. What can I do with you? THIS apple crips. Takes little prep and it is such a cozy way to whip up a dessert during the cold months. Best is to enjoy while it’s still warm.

MAKES for 4 people


INGREDIENTS

FOR THE FRUIT BASE:

  • 1 cup frozen forest fruits (or strawberries or raspberries)

  • 2 large apples

  • 1 tsp cinnamon

    FOR THE TOPPING:

  • 1 cup oats

  • 2 tbsp agave syrup

  • 1 tsp cinnamon

    *Recommend serving with your favorite plant-based yoghurt to make it more filling

DIRECTIONS

  1. Pre-heat the oven at a 165 Celsius degrees.

  2. Wash the apples and cut them up into small, bite-sized pieces. Add the frozen forest fruits into an oven-proof baking pan (mine is 35x25)  along with the apple pieces and the teaspoon of cinnamon. Mix them well.

  3. In a bowl, combine the oats with agave or maple syrup and cinnamon. If you want to make it crispier, feel free to add a teaspoon of olive oil here. With a spoon or a spatula, mix until the oats are covered with the agave or maple syrup.

  4. Top the fruits evenly with the oats mixture.

  5. Bake it in the oven at a 165 Celsius degrees for around 15 minutes.

  6. Serve it with coconut or soy yoghurt, or vegan ice-cream. Either way, it’s going to be amazing. Best enjoyed warm. You can even use it as a topping for your oatmeal.

    *Stays good in the fridge for 3 days.
