INSTANT NOODLE SOUP
Prep this delicious noodle soup ahead, and when you are in need of a quick lunch, all you need is hot water.
TOTAL TIME: 20 minutes
MAKES: 4 jars of soup
INGREDIENTS
For the oyster mushrooms (for all 4 jars)
300g oyster mushrooms
1 tbsp miso paste
2 tbsp water
1 tbsp olive oil
1/2 tsp garlic powder
1 tsp soy sauce
FOR 1 JAR (for 4:)
1 tsp miso paste (4 tsp for 4 jars)
1/2 tsp garlic powder (2 tsp for 4 jars)
1/2 tsp vegetable browth powder (2 tsp for 4 jars)
1 tsp soy sauce (4 tsp for 4 jars)
1 tsp water (4 tsp for 4 jars)
50g rice noodles, dry (200g for 4 jars)
1/4 stem spring onion (1 stem for 4 jars)
1/4 carrot (1 carrot for 4 jars)
1/4 red bell pepper (1 pepper for 4 jars)
1/4 block (45g) of firm tofu (1 block (180g) for 4 jars)
DIRECTIONS
Tear the washed oyster mushrooms into small pieces with your hands. Put them in a bowl and prepare the marinate: mix the miso paste, soy sauce, water, garlic powder and oil. Coat the mushrooms well and fry them in a pan on medium-high heat for around 12-15 minutes. First, a lot of water is going to come out from the mushrooms. Don’t drain them, wait until it disappears. Make sure to toss them around so they don’t burn. They are ready once the water is gone and the mushrooms are slightly charred.
Cut up the block of firm tofu into cubes. Cut the red bell pepper and carrot into very small pieces. Cut the stem of spring onion.
To assemble one jar, add the 1 tsp miso paste, 1 tsp soy sauce, 1/2 tsp garlic powder, 1 tsp water and 1/2 tsp vegetable browth powder to the bottom of a heat-proof large jar.* By using a spoon, mix these together in the bottom of the jar. Add 1/4 block worth of tofu cubes, and a quorter of the mushrooms. Top with 1/4 worth of cut up red pepper, carrots and spring onions. Finally add in the 50g of rice noodles. Close the jar with a lid.
Repeat filling the jars another 3 times.
Store it in the fridge until you want to have one. Remove 30 minutes earlier before enjoying it, to avoid the glass breaking from the heat.**
Boil water and pour it over the jar, until it fills it all. Let them soak in the hot water for 3 minutes before stirring them around and enjoying it.
*I love to add 2 teaspoons of soy sauce into my soup, but it maybe too salty for some, therefore I just recommend adding 1 tsp for starters, you can always add more, but cannot remove.
**This step is just for you own safety. Please be careful and make sure to use a heat-proof jar.
