lemon blueberry pancakes


These pancakes taste like cheescake. They are good for you and so delicious. The lemon and blueberry meet and have this pancake as their child. Just the perfect collab.

TOTAL TIME: 20 minutes
MAKES 10-12 pancakes


INGREDIENTS

For the pancake batter:

  • 1 ripe banana

  • 1/2 cup oat flour

  • 1 cup soy/oat milk (use soy for a higher protein option)

  • 1 tsp cinnamon, ground

  • 1 tbsp ground flaxseeds

  • 1 scoop optional protein powder (If you skip this, add only 3/4 cup plant milk. I use unflavoured soy protein from Myprotein)

  • 1/2 lemon’s juice and zest

    For the topping:

  • 1-2 tbsp soy yoghurt (I used vanilla soy yoghurt from alpro, highly recommend with this)

  • 1/2 cup frozen blueberries

DIRECTIONS

  1. Wash the lemon, wipe it dry with a clean paper towl/cloth. 

  2. In a blender, combine all the ingredients for the pancake batter (oat flour, plant milk, cinnamon, protein powder, flaxseeds, banana, lemon’s juice & zest). If you don’t want to use a blender, mash the ripe banana with a fork in a bowl, and then mix in the rest of the ingredients & combine well. The blender makes the batter smoother, so I recommend if you have access to one. Set the batter aside for around 5 minutes to set.

  3. Pour a touch of oil into a pancake pan (these barely have edges), and wipe it down with a papel towl. Heat up the pan to medium heat. Once hot, pour 2-3 tablespoons of pancake batter into the pan to make 1 pancake. To make the process faster, you can add another batch next to it, so you fry 2 pancakes at the same time. Fry for around 1 minute on the one side, then use a turner to flip them. Fry for another 45 seconds to 1 minute on the other side. If they burn, turn the heat lower and just fry them longer.* Remove the pancakes from the pan and onto a plate. Repeat the process until no batter left.

  4. For the topping, heat up the frozen blueberries on the stove in a pot on medium-high heat for around 3-5 minutes, until they thaw and become warm. Remove from the heat.

  5. Top the pancakes with the vanilla soy yoghurt and the blueberries and enjoy this heavenly breakfast.

    *Every stove is different, so try to find the right heat for this. It is better to take longer to fry than to burn the pancakes.
