INGREDIENTS

  • 1 block (180g) firm tofu

  • 1 large red apple (I used pink lady)

  • 1/3 cup plain coconut yoghurt (use greek-style for higher-protein option)

  • 1/4 cup vegan mayo

  • 1 tbsp nutritional yeast

  • 1/2 lemon’s juice

  • 1/2 tsp turmeric powder

  • salt & pepper to taste

  • optional 1 tsp mustard if you like the taste

DIRECTIONS

Start by cutting the firm tofu into small cubes along with the apple. Try to cut them to relatively the same size if possible.

In a large bowl, combine the coconut yoghurt, vegan mayo, nutritional yeast, turmeric powder, salt, pepper, and the otpional mustard. Mix well and add in the chopped tofu and apple pieces. Squeeze in half a lemon’s juice. Combine it well.
