BERRY CHIA JAM
Chia seeds are an amazing source of omega 3 and fibre. If you struggle to find a way to incorporate more into your diet, try this chia jam. It’s zesty and berry-licious.
PREP TIME: 10 minutes
REST TIME: 1 hour or overnight
INGREDIENTS
1 cup (frozen) strawberries
1 cup (frozen) raspberries
1/2 lemon’s juice
1 lemon’s zest
1 tbsp agave syrup (add more if you like it sweeter)
2 tbsp chia seeds
DIRECTIONS
Add the frozen berries and agave syrup* to a pot. Cook them on medium heat for around 10 minutes until they are cooked enough to mash with a fork or spoon.
Once you mashed them, add the lemon’s juice and zest. Make sure to add this after the berries are off the heat, to keep the Vitamin C content.
Pour the berry mix into an air-tight jar, mix in the chia seeds and close with a lid. Let it set for an hour before using it.

*I personally love this recipe as it is, but if you like a sweeter jam, I recommend adding 2 tbsp of agave.
