If you need an easy and nourishing meal for a weekday dinner, this is for you. It’s done in 20 minutes, and it is going to fill you up. Nourishing & comforting.

MAKES: for 4 people


INGREDIENTS

For the pasta:

  • 400g (4 portions) whole grain fusili pasta (vegan)

  • save 1 cup pasta water

  • 1 can (400g) white beans, rinsed, drained

  • 2 medium zucchini

  • 1 tsp dried basil

  • 4 cloves garlic

  • 1 white onion

  • 1-2 tsp olive oil for the cooking

    For the sauce:

  • 1 can (400ml) coconut milk

  • 1 cup frozen green peas

  • 1/2 cup cashews, soaked & rinsed

  • 1 tsp garlic powder

  • 1/4 cup nutritional yeast

  • handful of fresh parsley

  • salt & pepper to taste

Fresh parsley and 1/2 lemon’s juice to top.

DIRECTIONS

  1. Soak the cashews in a bowl with water for a minimum of 1 hour. Drain and rinse before using it. You can skip this step, but it helps to reduce anti-nutrients in cashews, making the iron more bioavailable (easier to absorb).

  2. Boil water and cook the pasta according to the package instructions. Make sure to properely salt the water before adding the pasta (like the ocean). Save around 1 cup of pasta water.

  3. While the pasta cooks, prep the sauce by blending all the ingredients for it in a blender until smooth. Set it aside.

  4. Finely chop the onion, and garlic, or if you have a garlic press, use that later. Chop the zucchini into half, then into half moon slices.

  5. Heat up a large pan at medium-high heat, add a drizzle of olive oil, the onion and use a garlic press for the garlic cloves. Sauté for a minute until golden brown, then add the chopped zucchinis, the dried basil, and around half a cup of pasta water to cook it down for 5 minutes.

  6. Add the drained and rinsed white beans to the pan, and fry for another 3-5 minutes, lower the heat if necessary (add more pasta water if needed-test if the zucchinis are cooked).

  7. Lower the heat to medium, pour in the sauce, and let it cook for a minute before stirring in the cooked & drained pasta. Top with fresh parsley and lemon’s juice when off the heat.
