If you need a breakfast that is delicious, can be meal-prepped and is well-balanced, look no more. This chocolate chia pudding is all of those and more.

PREP TIME: 10 minutes
TOTAL: 10 minutes


INGREDIENTS

  • 2 tbsp chia seeds

  • 1 ripe banana

  • 1 scoop optional vegan protein powder (I used unflavoured soy protein from myvegan)

  • 1/4 cup coconut yoghurt (or any plant-based yoghurt you love)

  • 1 tbsp natural smooth peanut butter

  • 1 tbsp unsweetened cocoa powder

  • 1 tsp cinnamon, ground

    Toppings:

    Best to serve with coconut yoghurt and frozen raspberries or frozen cherries

DIRECTIONS

  1. Put everything into a blender and blend until smooth.

  2. Pour into a glass/bowl and let it sit in the fridge for a minimum of one hour, or overnight for a ready to-go breakfast.

  3. Top with coconut yoghurt, berries or whatever your favorite topping is and enjoy.
