This granola is packed with all the delicious flavours of fall and perfect to meal prep for a to-go breakfast. Whether it’s on a yoghurt bowl, overnight oats, chia pudding or just with milk & fruits, it does the job. Crunchy, chewy and so good.

BAKING TIME: 15-20 minutes
TOTAL: 25-35 minutes


INGREDIENTS

DRY INGREDIENTS

  • 2 cups oats

  • 1 cup pumpkin seeds

  • 1/2 cup walnuts

  • 1/2 cup pecans

  • 1/3 cup dried cranberries

  • 1 cup lose dried apples

  • 5 pieces of dried figs

  • 1 tsp ground cinnamon

  • 1/4 tsp ground clove

  • 1/4 tsp ground ginger

  • 1/2 ground nutmeg

  • pinch of salt

WET INGREDIENTS

  • 1/4 cup agave syrup

  • 1/4 cup peanut butter, smooth, natural

  • 1/4 cup melted coconut oil

  • 1 tsp pure vanilla extract

DIRECTIONS

Preheat the oven for 150 C.

Corsely chop the the walnuts and pecans. 

In a bowl, mix together all the wet ingredients. In another large bowl, mix the oats, pumpkin seeds, chopped walnuts and pecans and spices. Then pour in the wet ingredients and mix everything until well combined and everything is coated.

Line a large baking sheet with parchment paper and spread the granola mix evenly, using a spoon or a spatula to push the mixture down.

Bake in the oven at 150 C degrees for 10 minutes. Take it out of the oven and toss them around. Bake for another 5-8 minutes. Make sure to stir, otherwise it can burn.

Once out of the oven, let it cool down. Meanwhile, chop the dried figs. Stir in the dried cranberries, chopped figs and dired apples (break with your hand a little bit) into the granola. Store in an air-tight container to use up the rest of the week.
