APPLE PIE OVERNIGHT OATS
This is a high-protein blended overnight oats is the perfect make-ahead breakfast for the busy days. You will feel energised and full, not to mention, it’s a hug from fall in a jar.

INGREDIENTS
1/2 block (150g) silken tofu
3 tbsp oats
2 tbsp chia seeds
1 ripe ripe banana
2 tbsp vanilla soy yoghurt (or greek style-but it can make the oats more bitter)
1/4 cup soy milk
1 tbsp natural smooth peanut butter
1/2 tsp vanilla extract
1/2 tsp cinnamon (ground)
1/4 tsp nutmeg (ground)
1/4 tsp clove (ground)
Cinnamon apple topping:
2 apples (1/portion)
2 tsp cinnamon
3-4 tbsp agave syrup
greek-style coconut yoghurt for the layers
DIRECTIONS
Blend all the ingredients for the overnight oats in a blender until smooth.
Make the cinnamon apples by cutting the apples into bite-sized pieces. Transfer them to a pan, add the agave and cinnamon and fry them on medium-high heat for around 3-5 minutes until the apples are starting to become a little brown and caramelised. Take off the heat.
Layer the oat mixture with some coconut yoghurt and the cinnamon apples, this way, it really does make it feel like an “apple pie”. Highly recommend mixing the apples in.
Either leave in the fridge overnight, or eat right away. I recommend consuming it cold.
