tofu LETTUCE TOMATO SANDWICH (TLT)
Sandwiches are always a good idea, especially when it is packed with protein and super delicious. Breakfast, lunch or a quick dinner, this TLT sandwich has your back.

INGREDIENTS
TOFU CREAM CHEESE (meal prep)
1 block (180g) firm tofu (I use basil tofu from lidl)
1 handful fresh dill or basil
1 tbsp extra virgin olive oil
pinch of salt
pinch of pepper
squeeze of lemon
1/4 tsp garlic powder
2 tbsp nutritional yeast
TOFU SLICES/1 sandwich
1/2 (65g) block firm tofu (I used smoked tofu from lidl)
1 tsp soy sauce
1/2 tsp garlic powder
1 tsp olive oil
OTHER FOR THE SANDWICH:
2 slices of sourdough bread
1/2 avocado
1/2 tomato
handful of sprouts
1-2 leaves of lettuce
DIRECTIONS
Add all ingredients for the “tofu cream cheese” into a food processor. Blend until smooth, takes around 1 minute. Store it in an air-tight container and you have meal-prepped high-protein spread for the week.
For the sandwich, prep the tofu slices. Cut the half a block of firm tofu into thin slices. Add them to a pan, pour over the soy sauce, olive oil and the garlic powder. Fry on medium-high heat, each side, until they become golden brown. Takes around 5 minutes.
Then, slice the tomato and avocado. Toast two slices of your favorite sourdough.
Assemble the sandwich by spreading some of the tofu spread onto one of the toast. Add the lettuce leaves, tomato slices, avocado and tofu slices. Finish with a small handful of sprouts, and add the other toast on top.
