RASPBERRY CHIA PUDDING


Say goodbye to boring breakfast. This is a deliciously nutritious way to start your day. Full of fiber, protein and healthy fats, all of which will help you stay full for longer. It’s creamy, it’s yummy and most importantly, so easy to make

PREP TIME: 10 minutes
SETTING TIME: 1 hour to overnight
TOTAL: 1 hour + 10 minutes


INGREDIENTS

  • 1 cup frozen raspberries

  • 1 ripe banana

  • 1 tsp cinnamon

  • 1 cup plant milk (I used oat)

  • 1 tbsp peanut butter, smooth, natural

  • 1 scoop protein powder (optional, I use vegan soy protein from Myprotein)

  • 1/3 cup chia seeds

  • plant yoghurt to top

DIRECTIONS

In a blender mix together the raspberries, banana, peanut butter, plant milk, cinnamon and optional protein powder. Once it is smooth, pour the mixture into a large bowl. Add the chia seeds and mix well until all the seeds are covered with the mix. If you prefer to add the plant-based yoghurt instead of topping the pudding with it, feel free to add around 1/2 cup here and mix well.

Leave it in the fridge for overnight or a minimum of 1 hour to set.

Once you are ready to eat it, scoop out as much as you’d like and enjoy with plant-based yoghurt, granola, nuts, seeds, fruits or just by itself.
