AVOCADO chickpea mash


Someone said avocado toast? Get ready for the ultimate avo experience with some added benefits for a long-lasting satisfying meal. Whether it’s breakfast, lunch or dinner, this avo spread has your back. It’s easy to make and you can make a big batch ahead for the whole week so you don’t need to worry when you suddenly go hungry.

INGREDIENTS

  • 1 can (400g) chickpeas, canned

  • 2 ripe avocadoes

  • 1/2 lemon’s juice

  • 1/4 cup vegan mayo

  • 1 tsp garlic powder

  • 1 tbsp nutritional yeast

  • 1 tbsp extra virgin olive oil

  • salt & pepper to taste

DIRECTIONS

Drain and rinse a can of chickpeas. If you want to and have the patience, you can remove the shells of the chickpeas, but it isn’t necessary here. 

In a bowl, mash the chickpeas with a fork or potato masher. Then add the 2 ripe avocadoes, mash those too. Add the rest of the ingredients and mix well. Optionally, you can add the capers, but if you are not a fan, leave it out.

I love having it with sourdough bread and veggies, as a dip with some crackers or tortilla chips, in a wrap or stuffing a sweetpotato with it. The options are endless.
