creamy blended oatmeal
Nothing says cozy days like a bowl of warm oatmeal. This is ultra creamy, easy to make and quite magical to start the day with.

INGREDIENTS
FOR THE OATMEAL
1 ripe banana (half garnish, half mashed)
1/2 cup oat flour
1 cup soy milk
1 tsp cinnamon, ground
1/4 tsp clove, ground
1 tbsp ground flaxseeds
1 scoop optional protein powder (if used, you might need a few extra tablespoons of
around 1-2 tsp agave syrup for caramelising
peanut butter for topping
DIRECTIONS
Peel and cut the banana in half. Mash one half with a fork. Cut the other half into thin rounds.
In a pot, mix together the oat flour, plant milk, flaxseeds, mashed banana, cinnamon and clove. Cook this on medium heat for around 3 minutes until the oatmeal starts to thicken. Turn off the heat, and if you are using, add the scoop of protein powder. Alternatively, you can add extra chia seeds, flaxseeds or hemp seeds to boost the protein content.
To make the caramelised bananas, add all the rounds of banana onto a pan. Drizzle on a touch of agave syrup and on medium-high heat, fry the bananas. Around 1-1.5 minute each side. Carefully, turn them with a tong one by one. They can easily break, so be gentle. Fry on the other side for another 1-1.5 minutes.
Pour the oatmeal into a bowl and top with all of your favorite toppings. Mine is the caramelised bananas, peanut butter, nuts and stewed berries.
