Someone said tofu is boring? I am here to prove you wrong. This tofu salad is so good and satisfying, it is the perfect lunch or breakfast.

INGREDIENTS

  • 1 block (180g) firm tofu

  • 1 tsp dried dill OR a handful of finely chopped dill

  • 1 stem spring onion

  • 1/3 cup plain coconut yoghurt (I used greek-style)

  • 1/4 cup vegan mayo

  • 1 tbsp nutritional yeast

  • 1 tsp garlic powder

  • 1/2 tsp turmeric powder

  • salt & pepper to taste

  • optional chilli flakes for those who love it

DIRECTIONS

Start by finely chopping the spring onion (make sure to wash it and remove the roots) and fresh dill. Then, cut a block of firm tofu into small cubes.

In a large bowl, combine the coconut yoghurt, vegan mayo, nutritional yeast, garlic powder, turmeric powder, salt, pepper, optional chilli flakes, and squeeze in half a lemon’s juice. Combine it well, add in the spring onion, dill and tofu cubes. Mix them and you are ready to serve it! My favorite combo is with lamb’s lettuce and some tomato slices.
